This naturally tender cut requires a skilled butcher to carve it from the shoulder clod. Also known as a mock/petite tender or shoulder tender, the Teres Major has more fat than a filet mignon. You can grill or sear it for 2-3 minutes on each side, as it is a lean, tender cut of beef from the chuck section of a cow. It's similar in quality to filet mignon but less expensive.We think beef cuts like this taste best with a little salt and pepper or with our fav Acme Salt seasoning.
