Eye of Round Roast

This flavorful cut comes from the rump area of a cow.  Eye of Round is good for pot roasts and roast beef. This roast is lean, benefits from a vinegar marinade, and is best slow cooked.  Pictures courtesy of Beef it's What's for Dinner.
