Tongue - Beltie Beef

Beef tongue can be boiled, pickled, roasted or braised in sauce. Widely used in a variety cuisines, tongue is used for taco fillings, pickled, and for open-faced sandwiches.  We like to slow cook tongue and then roast it in the oven to add a crispy top for tacos.
